During this lockdown period I had plenty of time.
So tried out this Lovely Cake!

A mild glaze made this loaf cake a delicious delight!
RECIPE FOR ALMOND LOAF CAKE
Time Taken : 1 hour approximately or more - depending on - if you are a beginner or an expert.
All purpose flour - 125 grams (1 cup)
Castor sugar - 125 grams (1/2 cup and 2 tablespoon)
Canola Oil or Vegetable oil - 125 millilitre (1/2 cup)
Eggs - 3
Baking powder - 1/2 tablespoon
Milk powder - 1 tablespoon
Vanilla essence - 1 teaspoon
Almond essence - 1/2 teaspoon
How to prepare and Bake the Cake!?
Grease a loaf pan with oil or butter and dust it with flour. Also line the bottom with butter paper. If it's a non stick type of loaf pan, just greasing with oil is sufficient. Set aside.
Preheat your oven to 170 degrees Celsius.
While your oven is preheating, let's prepare the batter in the mean time.
In a clean dry bowl, add the eggs and sugar and beat with a hand whisk or hand mixer till it becomes light and fluffy and increases in size.(Stiff peaks should be visible)
Add in the vanilla essence and beat for 10 seconds.
Add in the all purpose flour and beat till incorporated.
Add in the milk powder and beat till incorporated.
Now, add the almond essence and beat for 10 seconds.
Next, as you whisk or beat the batter add in all the oil bit by bit.
Pour the loaf cake batter into your loaf pan. And tap it twice gently
Place in your oven and bake it at 170 degrees Celsius for 30 minutes.
FOR ALMOND GLAZE
Almonds – 10 to 12 or ½ cup (blanched and sliced)
Sugar – ¼ cup
Butter – 1 /4 cup (Salted or Unsalted)
Milk – 2 tablespoons
How to prepare it?
Take all the ingredients in a sauce pan or non stick pan and mix them well.
On a gas top or induction with low heat bring the mixture to boil while continuously stirring.
Once it becomes thick and glazy turn off the heat.
Allow it to cool for a few seconds and pour it on the loaf cake. Spread as desired.
If you further wish to make the glaze more brownish, then, after you have applied it on the loaf, place it 5 to 6 inches below the top element of your oven and broil it for about 3 to 5 minutes.
You can also bake it on a stove top homemade oven on medium flame for 25 - 30 minutes or until toothpick inserted in the centre comes out clean.
You can use banana essence in place of vanilla essence.
You can skip the almond glaze too and top it with your choice of toppings.
For my loaf cake I did not brown the glaze by broiling, but you can do so if you like
If you like your cake cold, keep it in the fridge after it has cooled and then have as desired.
You can store this cake for a period of 5 days in your refrigerator in an air tight container or you can cover the cake with aluminum foil and then store in the refrigerator.
It is always better to sieve your flour to avoid lumps.
Eggs should be cracked in a separate bowl to avoid egg shells falling into the flour.
